Wednesday: Udon and fishballs

We found this recipe for a noodle soup with mibuna, which is apparently a characteristic vegetable of Kyoto, Japan.  The meatballs are made of chopped sardine (we used tinned, but fresh would probably have produced a better texture), flour, miso paste and ginger.  The vegetables are simmered in a dashi broth, and then the "meatballs" are added and simmered until they are warmed through.  The soup broth is finally flavored with a bit more miso.

Dashi is one of the basic ingredients in Japanese cuisine - it is a stock made of simmered seaweed and bonito fish flakes.  We purchased an "instant" dried dashi powder to save a little labor, but one of these days we should probably invest in the real ingredients.  For what it's worth, we had been making miso soup for years with just miso paste added to the water, and it REALLY is better with the dashi.

Thursday: Quick and Easy



Sardine-caper toast with carrot-mustard seed salad.

We were pretty tired this evening, so we just threw together two quick and easy dishes. For the salad, grated carrots were doused in mustard seeds that had been popped in oil. In a classic combination, canned sardines were mashed with a little lemon juice and chopped capers (see here for an example).

We usually use nonpareil capers (the little kind), but today we happened to have the larger, nicer caper berries in the fridge:

Dinners this week

Pardon the prolonged absence, faithful readers. We've been too busy cooking up a storm to actually... update the blog about our cooking. Here's what we've cooked in the past week:


Monday, 7-6-09: White bean croquettes with mashed purple heirloom potatoes




Tuesday 7-7-09: Fresh fava beans sauteed with thyme and sardine-caper toast




Wednesday 7-8-09: Hake with red chard and couscous


Thursday 7-9-09: Curry of golden beet, red cabbage and adzuki beans




Friday 7-10-09: Garlic scape omelettes with a purslane, arugula, and chickpea salad




Saturday 7-11-09: White bean salad with red quinoa and sauteed field mustard greens




Other miscellaneous cooking: a purslane frittata, a blackcurrant cake (sort of a coffee-cake style recipe, using no leavening), and a green gooseberry crumble. Lots of baked goods lately for all of the sour berries that are in season - we have been using local stone-milled pastry flour from Wild Hive Farm.
